INGREDIENTS (Nutrition)

1362 g whole chicken

1 coconut, drained and meat grated

2 lemons, juiced

1 bunch green onions, chopped

25 g dried red pepper flakes

salt to taste

DIRECTIONS

Preheat the oven to 375 degrees F (190 degrees C). Place whole chicken into a roasting pan. Roast in the oven for 1 hour, or until the leg moves easily within its socket. Remove from the oven, and allow the chicken to cool slightly.

Remove the skin from the chicken and discard. Tear the meat from the bones, and chop into small pieces. Discard bones, and place the chicken in a large bowl. Stir in green onions and grated coconut. Sprinkle liberally with lemon juice. Season with salt and red pepper flakes. Taste and adjust amounts of lemon juice, salt and red pepper so that one does not overwhelm the others.

Saipan Bearing Down For Typhoon "Choi-Wan"

Tuesday, September 15, 2009 · 0 comments

Saipan is in condition 1 and bearing down for Typhoon Choi - Wan. Just like Guam we are in the path of Typhoons when they make their way through the Pacific. On Typhoon Choi Wan Saipan will be feeling it the hardest. The typhoon was moving at 6 mph and was 150 miles east-northeast of Saipan and 255 miles northeast of Guam as of 5 p.m. yesterday. Winds extended outward of the center are at 180 mph.  Just like Saipan we on Guam are very used to typhoons and we know how to prepare for them.  We hope it goes by quickly for Saipan. Red Rice Recipe! Hmmm Hmmm....Good!

Sunday, September 13, 2009 · 0 comments

INGREDIENTS:

2 cups rice, rinsed (Calrose, sticky rice recommended. The kind you use for sushi)

2 Tablespoons achote seeds

1/2 teaspoon salt

2 Tablespoons cooking oil

1/2 cup chopped onions

2 cups water

DIRECTIONS:

Soak achote seeds in 1/2 cup warm water for 30 minutes. Add salt.

Rub or press achote seeds to get color in the water. Strain liquid into small pot with 1 1/2 cups of water and boil.

Saute onions.

Add rinsed rice, salt and onions to boiling achote colored water, and reduce heat to medium high for 5 minutes.

Reduce heat to low for 15 minutes or until cooked. Stir occasionally to prevent burning at the bottom.

Optional: Add peas and bacon during last 10 minutes of cooking time.

SERVE: with the rest of your Island meal. You don't have to visit Guam for this mouth-watering dish.
